Chipotle Morita Paprikas sind ger\u00e4ucherte, getrocknete Jalapeno Chilis. Jalapeno Chilis bleiben gr\u00fcn\u00a0 w\u00e4hrend der meisten Vegetationsperiode, aber werden rot im Herbst. F\u00fcr Chipole Morita d\u00fcrfen die Paprikas an der Pflanze verbleiben bis die tiefrot werden und beginnen zu trocknen. Diese tiefrote Jalapenos sind f\u00fcr einige Tage ger\u00e4uchert, bis sie vollst\u00e4ndig getrocknet werden. Um 500 Gramm Chipotle Morita zu machen braucht man 5 Kilos Jalapenos.<\/span><\/p>\n

Die Azteken wussten, dass einige Sorten der fleischartigen Chilis, heute bekannt als Jalapenos, durch Trockenluft nicht getrocknet und bewahren werden k\u00f6nnen. Deswegen versuchten sie derselbe Methode wie f\u00fcr Fleisch und Fisch: sie haben die Chilis mit Hilfe von Dampf getrocknet. In vielen Regionen von Mexico ist Dampf durch eine zuverl\u00e4ssige Methode gehandhabt: Gruben sind ausgegraben, die durch einen unterirdischen Tunnel verbunden sind. In einem dieser Gruben wurde ein Feuer angefacht, in anderen werden Chilis auf einen metallen Stand gelegt. Das l\u00e4sst dem Dampf Chilis hin\u00fcberzugehen, damit sie gleichzeitig getrocknet und ger\u00e4uchert werden. F\u00fcr Dampf haben sie Holz von einem Pekannuss gebraucht, was einen typischen und einzigartigen Geschmack gibt.<\/span><\/p>\n

Sogar heute wird der gleiche Prozess angewendet, aber schon mit einem 50x50M Ofen anstatt Gruben, die sich \u00fcber das ganze Erntegebiet erstrecken.<\/span><\/p>\n

Chipotle Mora Paprika werden vor allem in Chihuahua, Mexico hergestellt. Chipotle Mora ist der Name einer in Chihuahua hergestellten Paprika. Folglich befinden sich unsere Produtionspartner in Chihuahua. Paprika, die in anderen Orten hergestellt wurden, haben eine andere Farbe. Mora bedeutet auf Spanisch \u201elila\u201c und bezieht sich auf tiefrot, reine lila Chipotle Mora ist eine verbreitete Sorte. Andere Chilis k\u00f6nnen auch getrocknet und ger\u00e4uchert werden, aber nur rote Jalapenos nennt man Chipotle Mora.<\/span><\/p>\n
