En M\u00e9xico, el chile ancho se vende en tres diferentes calidades. \u201cPrimero\u201d es la mejor calidad, y son los chiles con la carne m\u00e1s gruesa y m\u00e1s largos. \u201cMediano\u201d es un nivel de calidad medio, y \u201cAncho\u201d es el nivel base. Alrededor del 15% de la cosecha de chile ancho seco se comercializa como colorante para comida y como polvo. El resto es comprado por los consumidores en vaina completa y es usado principalmente en salsas. El chile ancho representa casi 1\/5 de todos los chiles consumidos en M\u00e9xico.<\/span><\/p>\n

Con variaciones de color y forma, desde un rojo ladrillo oscuro hasta un color de caoba obscuro, el chile ancho seco revela un color cordob\u00e1n rojizo y anaranjado cuando se pone contra la luz. Ligeramente arom\u00e1tico, plano, muy arrugado y con una forma acorazonada, el chile ancho es un chile poblano seco, y es el chile seco m\u00e1s dulce. En su mejor momento, cuando es arom\u00e1tico y flexible, tiene una carne de grosor medio que ofrece un sabor dulce amaderado con notas de ciruela pasa, caf\u00e9, tabaco, regaliz y uva pasa. Le brinda un sabor dulce y parecido a la ciruela pasa a los platillos. Obtiene su nombre debido a sus caracter\u00edsticos hombros gruesos (anchos).<\/span><\/p>\n

Los chiles de la variedades capsicum contienen m\u00e1s vitamina A que cualquier otra fruta, y proveen una excelente fuente de vitamina C y B, aparte de significativas cantidades de hierro, tiamina, niacina, magnesio y riboflavina. Conforme a la conciencia nutrimental de hoy en d\u00eda, estos chiles no contienen colesterol ni grasas saturadas, son bajos en calor\u00edas y en sodio, y tienen un alto contenido de fibra.<\/span><\/p>\n

Agregue sus dulce sabor a salsas preparadas. Util\u00edcelos como tomates deshidratados. En combinaci\u00f3n con otros chiles secos, la rica dulzura de este chile brinda un efecto suavizante. Espolvoree trocitos o rebanadas de chile en sus comidas para obtener un exquisito sabor y color. Mejore carnes y aves, vegetales, guisos, salsas y sopas. Agregue una pizca al chile con carne, enchiladas, adobos, o cualquier carne preparada con pasta agria para sazona. El chile ancho se comercializa molido.<\/span><\/p>\n

Dependiendo de la regi\u00f3n, este chile se conoce por diferentes nombres. En los Estados Unidos existe la confusi\u00f3n acerca del nombre correcto para el chile ancho. De manera equ\u00edvoca, los productores le llaman tanto al chile fresco, como al chile seco, chile ancho. En M\u00e9xico nunca se le refiere al chile verde e inmaduro como chile ancho. En California, es com\u00fanmente confundido con el chile pasilla. El chile ancho es, de hecho, chile poblano seco, que significa \u201cel chile popular\u201d. El chile ancho seco, junto con el mulato y el verdadero chile pasilla, forman parte de la \u201cSanta Trinidad\u201d de chiles usados en el mole tradicional mexicano.<\/span><\/p>\n
