Los chiles serranos son verdes durante la mayor parte de la temporada de cultivo, pero en el oto\u00f1o se vuelven rojos. Para obtener el chipotle mora, los chiles se dejan en la planta hasta que se vuelven de color rojo obscuro y se empiezan a secar. Despu\u00e9s, estos serranos rojos se ah\u00faman por d\u00edas, hasta que se secan por completo. Se necesitan alrededor de 5 kilos de chile serrano para producir 500 gramos de chipotle mora. <\/span><\/p>\n<p><span style=\"color: #666666;\">Los Aztecas sab\u00edan que algunos tipos de chiles carnosos, hoy en d\u00eda conocidos como serranos, no pod\u00edan ser preservados sec\u00e1ndolos al aire. Por esta raz\u00f3n, probaron exitosamente secar los chiles con el mismo m\u00e9todo que utilizaban para carnes y pescados: con la ayuda del humo. En muchas partes de M\u00e9xico, se utiliza el humo de esta forma ancestral: se excavan pozos que se conectan a trav\u00e9s de t\u00faneles subterr\u00e1neos. En uno de estos pozos se prende una fogata, mientras que en otro pozo se colocan los chiles sobre una base met\u00e1lica. El humo de la fogata pasa sobre los chiles, haciendo que los chiles se ah\u00famen y se sequen al mismo tiempo. Para ahumar utilizaban madera de nogal, que da un \u00fanico sabor t\u00edpico.<br \/>\n<\/span><br \/>\n<span style=\"color: #666666;\">Hasta la fecha se utiliza la misma t\u00e9cnica, pero en hornos ahumadores de 50x50m, en vez de pozos que se extend\u00edan a lo largo de toda el \u00e1rea de cosecha.<\/span><br \/>\n<span style=\"color: #666666;\">Los chiles chipotle mora son elaborados principalmente en Chihuahua, M\u00e9xico. Chipotle mora es el nombre que reciben los chiles producidos en Chihuahua. Por lo tanto, nuestro socio productor se encuentra ubicado en Chihuahua. Los chiles que se producen en otros lugares tienen diferentes colores. Mora hace referencia al color rojo obscuro, casi morado, t\u00edpico de esta variedad de chile.
