El chile guajillo es una variedad de chile perteneciente a la especie capsicum annuum, el cual es usado ampliamente en la comida mexicana. Es el chile seco m\u00e1s popular en M\u00e9xico, despu\u00e9s del chile poblano (ancho). La carne delgada y de color rojo obscuro del chile guajillo, tiene un sabor a t\u00e9 verde con notas altas de mora. Las vainas son largas y de un sabor ligero. Con s\u00f3lo un poco de picor, son frecuentemente usados en la elaboraci\u00f3n de salsa para tamales: al fruto seco se le quitan las semillas, se le remoja, y se muele en una pasta fina, que despu\u00e9s se cocina con sal y muchos otros ingredientes, para obtener una salsa roja espesa, llena de sabor.<\/span><\/p>\n

Los chiles guajillo son excelente<\/span>s en pastas, mantequillas o untables para dar sabor a cualquier tipo de carne \u2013 especialmente pollo. Tambi\u00e9n, pueden ser agregados a salsas para crear una guarnici\u00f3n dulce y sorprendentemente picante. Un chile guajillo t\u00edpico tiene una forma alargada y frecuentemente con una ligera curvatura. Cada chile mide usualmente entre 10 y 15 cm de largo, con una coloraci\u00f3n rojiza o caf\u00e9 en su estado de madurez completa. El chile guajillo verde e inmaduro tambi\u00e9n puede ser cosechado y utilizado en la cocina.<\/span><\/p>\n

Cuando son cocidos, los chiles maduros tienden a pintar la comida de un color amarillento. Aquellos que cocinan con chile guajillo disfrutan de la dulzura ligeramente frutal con sabor a mora, y del picor medio junto con algunos toques t\u00e1nicos y de pino de este chile. Debido a lo dulce en relaci\u00f3n con lo picante de este chile, el guajillo es frecuentemente usado en la elaboraci\u00f3n del mole mexicano. El mole com\u00fanmente contiene chocolate amargo, pasas, y muchos otros ingredientes. El chile ancho, el chile pasilla y el chile guajillo, son com\u00fanmente categorizados como \u201clos chiles de la Santa Trinidad\u201d, y son considerados entre los mejores para hacer un aut\u00e9ntico mole. <\/span><\/p>\n
