Puya or pulla chilies (capsicum annuum) is a small and potent Mexican chili pepper, similar to the guajillo chili, only smaller and more potent. It has a fruity flavor. Scoville Heat Units are 5,000 to 12,000.
Suggested use:
Rinse product first with warm water, then soak in hot water for 10 minutes to rehydrate or add directly to a recipe that will cook for at least 10 minutes. To release more flavor, roast it in a 250-degree oven for 3 or 4 minutes. Once rehydrated, dice or puree and finally add it to a recipe.
