Jalapeno (Rouge et Vert)
Le jalapeño est un piment rouge, avec une sensation de brulure et de chaleur lorsqu’ils sont consommés de taille moyenne. Un jalapeno mature mésure environ 5-9 cm de long et est couramment pris et vendu quand il est encore vert. C’est un cultivar de l’espèce « capsicum annuum » originaires du Mexique. Elle est baptisée de Xalapa, Veracruz, où il était traditionnellement cultivé. Environ 160 km carrés sont dédiés à la culture au Mexique, principalement dans le Delicias, Chihuahua. La période de croissance est de 70 à 80 jours. Lorsqu’ils sont mûrs, la plante s’élève à 2,5 à 3 pieds de haut. En général, une plante produit des gousses de 25 à 35. Quand la saison se termine, les jalapenos commencent à virer au rouge.
Unefois sélectionnés, les poivrons mûrissent au rouge de leur plein gré. Les poivrons peuvent être mangé verts ou rouge. Par rapport aux autres piments, le jalapeno a un niveau de chaleur qui varie de légère à chaude selon la culture et de la préparation. La chaleur, causée par la capsaïcine et composés apparentés, est concentrée dans la membrane qui entoure les graines.
