Mulato
Également connu sous le nom de : piments mulato ou poivre mulato
Le mulato est un piment large, plat et ridé. Il mesure 4 x 3 pouces, avec un fond conique. Ce piment a la couleur du chocolat profond. Les piments Mulato ont une peau épaisse moyenne et une saveur profonde qui n’est pas trop chaude, ni trop persistante. Le mulato est similaire à un ancho, mais le mulato a plus d’une saveur de fumé. Couramment utilisés en sauce mole mexicain. Sur l’échelle de la chaleur le mulato va de 2 à 4 points. Scoville chauffer 500 unités – 2.500.
